Oregano sets the stage for a beautiful story. The literal meaning of this herb is “Joy of the Mountain.” In Greek oros means mountains and the ganos means joy. Thus Oregano is the joy of the mountains, grown in the Mediterranean region of Europe to central Asia, and then made its way to the Eastern United States. Oregano was mostly used for medicinal purposes, for aching or sore bones and muscles. At the end of World War II this herb made its way into the hearts of everyone via the beloved triangle slice of bread- pizza. Whether you use it in your tomato sauce or for a sore muscle, oregano has staked a claim on our taste buds and intends to stay there.
Ascona Oregano Spaghetti Sauce
Ingredients
- Water for boiling
- 4-inch diameter of spaghetti
- Olive oil
- 2 chicken breast, cubed
- ½ cup sliced mushrooms
- 1 chopped onion
- 1 tbsp. minced Garlic
- 2 7 oz can of chopped tomatoes
- ½ cup water
- 1 tsp. dried oregano
- Salt and pepper
Instructions
- Cook the pasta at al dente ( or a little undercooked) and set aside.
- In a frying pan large enough to fit all the cubed chicken, add olive oil and fry chicken and set aside.
- In the same pan combine mushrooms, onions, and garlic. Sweat over medium heat.
- Add tomatoes and water and bring to a boil, boil for 5 minutes.
- Season with oregano, salt, and pepper. Reduce heat and simmer for 10 minutes.
- Add reserved chicken, ham, and parsley. Warm until desired temperature.
- Serve atop the spaghetti and top with parmesan.
